Galaxy Taco is great for group events because we’re open to doing just about any kind of awesome you have in mind. Our room configurations offer a ton of flexibility—from an intimate private area that seats up to 12, to our patio for up to 50 guests, or our indoor dining area that seats up to 80 people. Or book it all! Our menu can be as casual as a build-your-own taco bar to a more structured tray-passed appetizer and plated entrée experience. And we’re just as well-suited to groups who’ve just finished kayaking and are sandy in flip flops and board shorts, as we are to business dinners, cocktail parties, bachelorette parties and rehearsal dinners. So, let’s party!

Masa (Spanish for dough) has a shelf life like anything else. If it sits too long it becomes sour. Like with coffee and olive oil, people get used to off flavors, rancid European oil verses fresh California oil, stale ground coffee (remember when all coffee was sold pre-ground?). It’s the same with corn. Next time you’re in a restaurant with a person pressing tortillas in the dining room ask them where they get their masa and when it was ground. If they can’t answer that, you might want to reconsider your order.
Cook and steep – or "nixtamalize" – the dried corn in alkaline water overnight. (Read more here.)
Ask your kitchen staff to come in early, every single day, to rinse and grind 100 pounds of "nixtamal" into fresh masa. Every day? Yes. Every. Day.
Carefully portion the masa into 1,500–2,000 balls and hand-press tortillas daily, using one traditional single tortilla press.
Start again tomorrow.
Yes, it’s a grind. Would it be easier to buy our masa? No doubt. But fresher is always better. And awesome isn’t always easy.
